Goodmorning, today I’ve decided to write with pictures a “What I eat in a day” blog being that I am a baby vegan and Intermittent fasting and doing the keto diet, I figure you would like to know what my day consist of on a daily basis when it comes to eating. Now my Intermittent fasting starts at 2pm to 8pm and I will fast 9pm to 1pm the next day.
In the morning I will have a cup of coffee with 2 tsp of raw sugar and 1 tsp of cream in my coffee. I stay under 50 calories so I do not break my fast. Afterwards, I will make me a cup of water with Apple cider vinegar with the mother, lemon, and cayenne pepper to help my get my digestive going. I do this 3x a day and drink a gallon a water for the day also.

I have prepared Steamed Broccoli and carrots
1 head of cauliflower and cut the cauliflower into florets, rinse, and place in streamer. Steam for 15 to 20 minuets or until soft. Remove from heat and drain excess water off.
2 melt butter and combine the cooked cauliflower and all of the ingredients in a mixing bowl like non diary milk (Almond milk or Silk milk), 1/2 tsp of garlic powder, and pinch of salt & pepper.
3 Use a blender, hand mixer, or food processor to combine everything
4 Put the half of the steamed broccoli inside the cauliflower and enjoy.
The Next thing I made was Meatless chicken strips to go with my meal and I loved it with organic ketchup.
Here I have a 1/2 cup of brown rice that I steamed in my rice cooker.
For my sweet potato I took out my baking pan and with a fork made some holes so the sweet potato will cook faster. Put it in the oven for 45 mins or until you see the caramelized liquid coming out of the sweet potato. Here you let it cool down for 10 mins and then you peel and scoop out the sweet potato. I put half on my plate for my dinner.
Lastly this was a combination of foods such as
black eye peas I already cook days before
Squash- 1 cup
spinach-1 cup, cherry tomatoes-1 cup
Onion-1/2 small pieces
Cucumber- 1/2 cucumber cut up
Shredded carrots-1 cup
Brown rice-1 cup
- Saute the onion and garlic with olive oil
- Cooked the brown rice separate
- Cut up the cherry tomatoes, cucumber, and squash
- After the onion and garlic get brown put the cherry tomatoes, cucumber, shredded carrots, and squash in the pan and add water to simmer.
- Add salt, pepper, and pinch of cayenne pepper
- Lastly add the black eye peas and the spinach. Let everything slimmer for another 5 to 10 mins then remove and plate it. Done!
